Time: Vermicelli uppuma
Ingredients:
Vermicelli – 3 cups, roasted
Chopped vegetables:
Carrot, beans, tomatoes (depends on kids fav. veggies)
Green chilli – 1 length wise sliced
Onion - 1 medium sized, finely chopped
Garlic - 3 pcs
Ginger – 1 tsp grated
Oil - to fry
Oil - to fry
Urad dal – 1 tsp
Mustard seeds – 1 tsp
Coriander leaves – 1 sprig
Coriander leaves – 1 sprig
Curry leaves – 1 sprig
Water – 1 cup / as required
Method:
Heat oil in a pan or cheenachutty. Add mustard seeds and allow to splutter. Add the urad dal and fry till they get brown color. Sprinkle curry leaves on it. Immediately add garlic, ginger and fry till it gets brown.
Then add sliced onion and sauté till they become translucent.
Add veggies and chilli after onion gets pale brown.
Add vermicelli, water and Salt to the sauté mix.
Cook for 5 minutes in low flame.
Serve hot with egg.
Masala Uppuma
Add a tsp of garam
masala powder, a tsp of chicken masala and fried peanuts to the sauté mix. This
goes well for parties as a variety with battora and fried rice recipes.
