Carrot thoran

Carrot thoran
Carrot thoran a healthy vitamin rich recipe especially for kids and school goers who stay empty tummy for hours in school – cook this recipe at least once in a week for your kids.


Ingredients:
Carrot – 3 nos, cleaned, scrapped
Green chilli – 2 nos
Salt – as required

To grind:
Coconut grated – 1 cup
Garlic- 2 cloves
Cumin seeds/jeera – 1 tsp
Chilli powder – ½ tsp
Turmeric powder – a pinch

To temper:
Coconut oil – as required
Urad dal – 1 tsp
Mustard seeds – 1 tsp
Curry leaves – a sprig
Red chilli – 1, halved into two

Method:
Grind the items listed under ‘to grind’ in a mixer and keep aside. Heat oil in a wok on medium flame – sauté items listed under ‘to temper’ in the order given. Once mustard splutters – add carrot and chopped chilli. Add salt with water and allow to cook for few minutes on medium flame. Now mix the grinded paste and cook for few more minutes on low flame. Stir well so that water gets absorbed and carrot gets fried well.


Serve hot with rice.
