Kothu Idiyappam/ Kothu String hoppers

Kothu idiyappam
Kothu idiyappam - a special menu for the evenings at WestPark, the beach side restaurant in Maldives. Srilankan hotels are very peculiar in their usual menu, we can just jump in around 7.30 – 8 pm for the hot spicy kothu idiyappam with chicken, egg and veg varieties. I use the left over idiyappam to make kothu at home.

Ingredients:
Idiyappam – 5 nos, cooked/leftover
Onion – 1, finely chopped
Garlic – 4-5 nos
Carrots – 1, chopped length wise
Beans – 3, chopped length wise
Green chillies – 2 nos
Chicken powder – 1 tbsp
Oil – as required
Curry leaves – a sprig

Method:
Heat oil in a pan/cheenachutty – fry chopped garlic, onion, green chillies with curry leaves. 
Add rest of the ingredients with a tbsp of water and cook on low flame. 
Break idiyappam into pieces. 
Add idiyappam pieces with the cooked vegetables and mix well. Serve hot kothu idiyappam with raita.
