Poori and Mashed Potato

Poori and Mashed Potato
Our weekend special: Poori and mashed potato. The crush for this mishmash started in a morning sickness day (for my little one) in Maldives. My foodie with diet conscious never says dislike to this recipe. Thanks to our friend in Evening cafĂ©, Male’ introduced this combination and after that I never had poori without this mashed potato J

I was not able to shoot the pictures as the guys around me started floating ships on their mouth and did the show in a hurry-burry. All that I got was my share to shoot and next time will upload the process of making. 


Ingredients: Poori
Maida/ All-purpose flour – 1 cup
Wheat flour – 1 cup
Salt – as required
Oil – ½ litre

Method:
Mix both flour together with required amount of salt and water. Knead well using your hand or with the help of stand mixer. You can add a spoon of ghee or oil but it’s optional.  Keep aside in a bowl for 10-20 minutes for the dough to get soft, cover it with a wet towel. Cut or divide the dough into small balls, roll the dough (by dusting flour) evenly into circles.

Heat oil in a kadai – add a poori only when the oil is amply hot. Maintain the heat level so that poori will puff up properly. Slowly toss the other side of poori with a ladle. Fry both sides into golden brown. Repeat it to make all pooris. Transfer the poori into tissues to take away excess oil. Serve hot with mashed potato.

Note: Add less amount of flour while rolling, you can apply oil so that oil will not get burnt flour. Dough rolled must not be too thin nor thick

Ingredients: Mashed potato
Potatoes – 2-3 medium size
Onion – 2, chopped finely
Garlic – 2 cloves
Green chillies – 2 nos
Turmeric powder – ¼ tsp
Salt – for taste
Coconut oil – as required
Mustard seeds – 1 tsp
Curry leaves – a sprig

Method:

Pressure cook potatoes for 3-4 whistles, once cooled down peel the skin and mash it well with hand or ladle, no need to use mixer. Heat oil in a pan/wok – add mustard seeds, splutter it and then curry leaves. Add chopped garlic sautĂ© till it turns light brown, now add chopped onion, green chillies and stir fry on medium heat. Reduce the flame add turmeric powder, salt, water and the mashed potato. Mix well and switch off the stove. Serve this tasty side dish with hot pooris.
