Cheera/Kheera chakkakuru aviyal /Red Spinach fry with jackfruit seeds
Ingredients:
Cheera/Red spinach - a bunch- cleaned, chopped
Jackfruit seeds - few
Salt - as required
To grind:
Coconut grated - 1 cup
Garlic- 2 cloves
Cumin seeds/jeera - 1 tsp
Chili powder - ½ tsp
Turmeric powder - a pinch
To temper:
Coconut oil - as required
Urad dal - 1 tsp
Method:
Serve hot with rice.
Note:
Add only required or medium amount of water to cook to get a dry aviyal.
Red Spinach - rich in fiber helps digestion and also in the process of bowel movement. It reduces anemia in growing children. Spinach, red or green can be consumed either raw or cooked. You can use as salad leaves with mayonnaise with any of your choice of fruits and vegetables and a tbsp of sweetener... yummy!
Now its homely... The age old practice of using protein rich jackfruit seeds with Cheera/Red spinach. The season is off for jackfruits and leftovers are seeds :) .
Except those getting gastric :( the cooked seeds taste faintly sweet and goes well with cheera. I am having Cheera chakkakuru aviyal for today’s recipe.
Ingredients:

Method:
Grind the items listed under ‘to grind’ in a mixer and keep aside. Heat oil in a wok on medium flame - sauté items listed under ‘to temper’ in the order given. Once urad dal turns red - add chopped Cheera/Red spinach and jackfruit seeds. Add salt with water and allow to cook for a few minutes on medium flame.
Now mix the grinded paste/powder and cook for a few more minutes on low flame. Use the handle of the ladle to spread the fry so that it dries fast.
