Kovakka fry/mizhukku puratti

Kovakka a popular veggie in our terrace garden, is usually used to fry and goes well with sambar. I make it without masalas since it is a 100% tummy friendly vegetable. Those High B.P. pals try this recipe in non-stick pan. 

Ingredients:
Kovakka/Ivy Gourd – 10 nos
Pepper – 1 tsp
Salt – to taste
Oil – as required

Method:
Wash kovakka, trim the edges and cut them breadth wise in equal size. Heat oil in a pan, add the chopped kovakka and sprinkle salt water on top. Cook for around 5 minutes on medium heat, to soften it. Turn both sides of kovakka, don’t stir hardly as it will spoil the fry. Do not add water. Turn off the flame at a stage where kovakka becomes crispy but I prefer to cook both sides only not deep fry. Serve hot with rice and moru curry.
Note: better to avoid ripe kovakka, as it will turn mushy soon.
