Carrot rice with kondattam
Mama never diverted from her usual recipes, do I ever did. But Gireesh gave me his hostel recipe while he was in erode and here goes my combination of carrot rice with kondattam, pappadom, salad and fried chillies. We survived our working days on this simple easy recipe and my Maldivian friends as familiar with this recipe.

Carrot Rice
Ingredients:
Rice – cooked 1cup
Carrot – finely grated ½ cup
Coriander leaves – a sprig
Curry leaves - a sprig
Pudina leaves - a sprig
Salt – to taste

To temper:
Urad dal – 1 tbsp
Mustard – 1 tbsp
Cinnamon – a small piece
Cardamom – crushed/ splitted 2 pieces
Cloves – 5
Oil – 2 tbsp

Method:

Heat oil in a pan – add urad dal and fry till nicely browned, add mustard seeds and allow to splutter. Now it’s time to cook the carrot, add freshly grated carrot with salt, cinnamon and water.  Close the lid to cook for 5 minutes.

Mixing:
Add the cooked rice to the carrot and mix slowly, sprinkle coriander and pudina leaves. Close the lid and again reheat for few minutes to bring the flavor out while serving.

Serve with raita, crispy kondattams and pappodams.




Note: While cooking carrot, do not add excess water as it overcooks it.
