Masala
Dosa
My MIL named this as masala dosa and it is
entirely different from what we get from restaurants. The batter for dosa is
made by grinding rice, black gram, toor dal, red chillies and fennel seeds,
where the one we get from restaurants the masala would be hiding inside.
Thuvaiyal combination is common but for me it works well with chammandhi podi.
Ingredients:
To
grind:
Rice – soaked 1 cup
Black gram – soaked, a hand full
Toor dal/thuvara parippu – soaked, a hand full
Red chillies – 4 nos
Fennel seeds – 2 tbsp
Asafoetida
– turkey berry size
To
garnish on dosa:
Shallots – 3, chopped
Green chillies – 1, chopped
Curry leaves – a sprig, chopped
Salt for taste
Method:
Grind the items listed under ‘to grind’ in a
grinder to form a batter. Add chopped shallots, green chillies, curry leaves
and salt to the batter. Make crispy masala dosa and serve with thuvaiyal.
