Fried Chicken Curry

Fried Chicken Curry/Varuth Kozhi curry
Today on this Eid day started our breakfast with Hussain Ahmed & family. It took me back to our nostalgic days of Maldives. Mamma, his wife prepared chicken curry, mutton curry, chicken fry with paratha, vatta appam, kuzhalappam, halwa, raw mango jam etc… so thought of cooking fried chicken curry for lunch.

Ingredients:
Fried chicken – 1 cup
Garlic – chopped 2 tbsp
Ginger – chopped 2 tbsp
Onion – 3, sliced thinly
Tomato – 1, sliced thinly/ tomato paste – 1tbsp
Chicken powder – 1 tbsp (Eastern brand)
Coriander powder – 1 tbsp
Chilli powder – 1 tsp (Kashmiri)
Garam masala Powder – 1 tsp
Salt – for taste
Oil – as required
Water – as required



Method:
Fry the chicken pieces and keep aside. Heat oil in a kadai – add chopped ginger and garlic fry until it turns light brown. Add chopped onion with a pinch of salt – fry well till it gets transparent. Add sliced tomato – sauté till it gets cooked. Now reduce the heat and add the powders listed + fried chicken – mix slowly with the sautéed onion tomato and few tablespoons of water. Add salt if necessary. Serve with rice.



Note: can add coconut milk if you need a watery curry.
