Vanpayar (Red Cow
Peas) Salad
Salad probably needs no introduction, which is
healthy, easy to cook appetizer, goes well with fried rice, biryani etc… Try
salad without raita for today’s special vanpayar/red cowpeas salad. Cowpeas
load tons of nutrients that are essential for the body. It balances cholesterol
and blood sugar levels, repair skin cells, stops hair loss etc… never ending J

Ingredients:
Vanpayar /Red Cow Peas – 1 cup
Cabbage – 1 cup, chopped
Onion – 1, chopped
Green chillies – 1-2 chopped
Ginger – 1 tsp
Pepper powder – ½ tsp
Lemon juice – 1 tsp
Salt – required
Olive oil – 1 tsp
Coriander leaves – a sprig.
Method:
Soak vanpayar for 4-6 hrs. Boil Vanpayar in a
vessel or Pressure cook with salt and water until soft. In a bowl add cooked Cowpeas,
chopped Cabbage, Ginger and Green chillies. Sprinkle lemon juice. Garnish with coriander
leaves and serve with rice varieties.
