Mango
with mixed veg Curry / Mangayitta Pacha Theeyal
Mango season is back! J and you can
find it’s taste in each & every recipe. Mangayitta Pacha Theeyal/mixed veg
curry with mango is what I know than my in-laws special cucumber curry. Today I
dipped my tongue in my in-laws special. No matter they differ in opinion with
My MIL they had a unique taste in cooking.
Amma claims that no
Brinjal/egg plant goes with this curry. Cucumber with carrot, drumstick,
tomato, mango and green chili combination suits well.
Ingredients:
Cucumber – sliced square shape – ¼ cup
Drumstick – sliced point finger length – 5-7 nos
Carrot – sliced cubes – ¼ cup
Mango – sliced cubes – ¼ cup
Green chillies – 1, sliced into 2-3 pieces
Salt – for taste
To grind:
Coconut grated – 2 cups (medium)
Shallots /small onion – 2 nos
Chilli powder – 1 tsp
Turmeric powder – 1 tsp
Cumin seeds – 1 tsp
Pottukadala /Roasted gram– 1 tsp
To temper:
Coconut oil – 1 tbsp
Shallot – 1, chopped into small pieces
Mustard seeds – 1 tsp
Curry leaves – a sprig
Red chilli – 1
Method:
Cook sliced cucumber, Drumstick Carrot, Mango and green chili in a heavy bottomed pan/cooker
with salt. Grind the items listed under
‘to grind’ with water in a mixer into a smooth paste. Heat oil in a
cheenachutty /wok – add mustard seeds to splutter, and then finely chopped
shallots, fry till it turns golden brown. Now add curry leaves and red chilli
toss well - pour grinded paste and cooked veggies into it. No need to boil just
heat it, your theeyal is ready to serve.
Note: when you use cooker - make sure the mango doesn’t
go mushy. If that theeyal goes tangy.
