Jackfruit chips/chakka vattal
Jackfruit - a seasonal fruit in our villages with which we make plenty of recipes either with ripe, half ripe and unripe ones. Jackfruit chips should be made from half matured fruit. I made this from the fruit harvested in our home garden.

Cut the (fresh) fruit not ripe or half ripe, remove the middle stem – will get sticky, gummy latex around the fruit, use oil on your hands and de-seed it. Slice it length wise – add salt and start frying. Need patience for a ton and time to complete the task. Don’t waste time just start frying… JJ delay spoils the crispness.

Ingredients:
Jackfruit – sliced
Turmeric powder -1 tsp
Chilli /pepper powder – 1 tsp
Salt – as required
Coconut oil – ½ litre

Method:
Heat whole oil in a kadai / cheenachutty for few minutes on medium flame – make sure it boils. Add sliced salted fruit and deep fry for few minutes, slowly toss it using a spatula. 

Now sprinkle turmeric and chilli/pepper powder. Transfer the fried chips on a tissue. Store in air tight container and enjoy having crispy, crunchy yummy chips.
