Brinjal Fry

Brinjal Fry/Kathirika Mizhukku Puratti/Kathirikai Varuval
Brinjal - Usual odium veggie for me but this time tried my sis-in-law’s meek recipe on brinjal suits well with rice.


Ingredients:
Brinjal – small, 3-4 nos
Turmeric powder – ½ tsp
Pepper Powder - 1 tsp
Salt – for taste
Oil – for frying
Mustard – 1 tsp
Curry leaves – a sprig

Method:
Cut brinjal into small pieces and soak in water for few minutes – rinse twice. Cook brinjal in a wide – mouthed vessel with a pinch of salt and turmeric powder.

In a pan /wok heat oil – add mustard (allow to splutter), curry leaves, cooked brinjal and fry for 15-20 minutes on low flame. 

Toss the sides with a ladle and sprinkle salt and pepper powder for taste. No need to add water. Fried non-sticky brinjal is ready!
