Lady’s finger kichadi
Kichadi an important element in our wedding and
onam sadhyas while the veg added can be lady’s finger/cucumber/bitter
gourd/ginger/beetroot... here goes a long list. The curd added at the end of
process makes it delicious.
Ingredients:
Lady’s finger/Vendakka – 5 nos, chopped evenly
in circular shape
Green chillies – 1, chopped
To grind:
Coconut grated – 1 small cup
Ginger – 1 tbsp
Green chillies – 2 nos
Jeera/ cumin seeds – 1 tsp
To temper:
Mustard seeds – 1 tsp
Dry red chilli – 1
Curry leaves – a sprig
Coconut oil – as required
Method:
Grind the items listed under ‘to grind’ in a
mixer. Heat oil in a pan / chennachutty - Fry chopped ladies finger and green
chilli for 10 minutes till both sides get dark brown – sprinkle salt water on
it. Transfer fried veggies into the grinded mixture. In the same pan heat coconut
oil – add mustard seeds and allow it to splutter. Add the splitted red chilli
and curry leaves. Pour it to the veggie + grinded mixture and heat it.
Add yogurt /curd after it gets cooled down. Serve
with rice.
