Hot egg masala and Appam

Hot egg masala
A simple… easy to cook 10 minutes recipe for appams – usually rich creamy curries gives a perfect combination but this time credit goes to huby in making this hot egg masala J J

Ingredients:
Onion – 2, medium size, chopped length wise
Garlic – 3-4 nos, chopped/crushed
Ginger – chopped pieces, 2 tbsp
Tomato – 2 nos, sliced length wise
Green chillli -1, medium size, chopped length wise
Egg – 1
Fish masala powder – 2 tsp (Eastern)
Salt - for taste
Coconut oil – to fry
Curry leaves – a sprig
Coriander leaves – a sprig

Method:
Heat oil in a pan – sprinkle curry leaves - fry garlic and ginger till it turns light brown. Add onion with a pinch of salt – fry on low heat flame until it turn golden brown. Add green chilli, tomato – fry till it gets cooked.


Now add fish masala powder, mix well and move it to one end.


Pour egg to the center with salt and cook for few minutes/ egg white gets cooked and turn pure white.


Now spread the cooked egg white with a spatula to the whole masala. Turn off the heat and garnish with coriander leaves.


Serve hot with appams.
