Tomato Rice/Thakkali Sadham
First time experience of Tomato rice was in papa’s cooking. He just had
few tomatoes for our picnic day special. I strongly believed pappa played with rice,
tomatoes and cooker there we got a wonderful recipe in Lunch box…
My foodie stays away
from cooker and I found my own
version of it. Just mixing boiled rice with the aroma rich tomato masala
mixture. Try this one!
Ingredients:
Rice- 1 cup any normal rice,
which won’t go mushy
Water – for cooking
Tomatoes – 2-3 medium,
finely chopped
Ginger –garlic paste/ finely
chopped – 1 tbsp
Fennel seeds – 1 tbsp
Cloves- few
Cinnamon - few
Cardamom- 2, crushed
Star Anise - few
Mint leaves – chopped a
pinch
Turmeric – a pinch
Salt – for taste
To temper:
Coconut oil – 3-4 tbsp
Shallot – 1, chopped into small pieces
Mustard seeds – 1 tsp
Curry leaves – a sprig
Coriander leaves –
chopped a pinch
Method:
Cook rice separately
and drain aside. Heat oil in a kadai – add things included in ‘To Temper’ and
crackle them. Add tomatoes and saute them.
Now add chopped ginger –garlic /paste
and saute till raw smell changes to cooked smell. Reduce the flame and add rest
of the masalas and salt. Close it with a lid and cook for a few minutes. If required
sprinkle water to it. Now with a creamy mixture, add boiled rice and mix
slowly.
Check salt and maintain the taste. Again close the lid and cook for few
more minutes. Serve tomato rice with Chammandhi podi and pappadoms.
